Meatball Stroganoff & Homemade Dinner Rolls

Hope you had a wonderful weekend! With all this wintry weather around the county, nothing sounds better than homemade comfort food! Yesterday we had company over, and I made one of my dad's FAVORITE comfort food meals- Meatball Stroganoff! I also made some homemade dinner rolls, and thought I'd share both recipes, so here they are:
Meatball Stroganoff
Ingredients:
1 Bag of frozen, home-style meatballs (1/2 oz each)
1 Container of Fresh Mushrooms Chopped (optional)
2 Tbsp Extra virgin olive oil
4 Cups Beef broth
1 Tsp Salt (to taste)
1 Tsp Black pepper (to taste)
2 Tsp Parsley
2 Tsp Oregano
2 Tsp Basil
2 Cups Sour cream
8 Oz Cream cheese
2 Cups Heavy whipping cream
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
2 Tsp Corn Starch (optional for thickness)
2 bags of Egg noodles
(can be made with as much seasoning as you want, you can add a little more corn starch to your sauce if you would like it thicker, and you can always do more meatballs and noodles depending on how many people you are feeding).
Directions:
Homemade Dinner Rolls
*Can be made soy-free - with the right cooking spray*
Ingredients:
2 Cups Warm milk
2 Tbsp Instant dry yeast
1/4 Cup Sugar
2 Tsp Salt
6 Tbsp Salted butter, softened
2 Large eggs
6 Cups all-purpose flour
1 Tbsp Salted butter, melted (for brushing)
Cooking spray (olive oil if you are going soy free)
Yields: 24 rolls
Directions:
1. In medium bowl, combine warm milk, yeast, and sugar. Let proof for 15 mins (I put the bowl in the oven on the "Proofing" setting.
2. Pour mixture in bowl of a stand mixer, and add salt, butter, and eggs. Stir on medium speed until mixture is fully mixed and creamy.
3. Slowly begin to add 5 cups of flour, one cup at a time. Once flour most of the flour is mixed in, switch to a dough hook, and turn on low speed. Slowly add remaining 1 cup of flour, and turn on medium speed. You may need to add in a bit more flour until the dough pulls away from the sides of the bowl. You want the dough to be slightly sticky, but soft.
3. Once dough is full mixed, and is off the sides of the bowl, transfer to a clean, lightly greased bowl (you can take the dough out, clean the mixing bowl, grease it, and put the dough back in it.) Cover the bowl with a damp towel and let rise for 90 minutes (it will take the full 90, and I stick the bowl back in the oven on the "Proofing" setting.)
4. Once dough has risen, take out of bowl and knead on a floured surface into 24 individual balls. Place balls of dough on a greased baking sheet in six rows of four. Cover dough with a damp towel and let rise 1 hour (I put it back in the oven on "proofing".)
6. Preheat oven to 375 degrees. Bake rolls for 12-14 mins, until lightly browned.
7. Once rolls have baked, remove them from oven and lightly brush with the melted butter.

- In a large skillet, add oil and when oil is hot, add frozen meatballs. Brown meatballs. Add in chopped mushrooms and saute them.
- Add in the 4 cups of beef broth to deglaze the meatballs.
- Add in seasonings (salt, pepper, parsley, oregano), and allow mixture to simmer for at least 5 mins (longer if you want those flavors to be stronger).
- Add in heavy cream and bring to a boil to thicken mixture up.
- Reduce heat, and add sour cream and cream cheese, garlic and onion powders, and allow to simmer for 10 mins.
- While mixture is simmering, cook egg noodles (according to packaging instructions).
- If sauce is not thick enough, or you want more seasoning- go ahead and add it.
- Turn off heat, and serve. You can mix in the noodles to the sauce, or serve the sauce over the noodles.
